Hi Reader,

I’ve had recipes get stuck in my head the way songs do.

Not important songs, mind you. Not arias. Not “Bridge Over Troubled Water.” More like the chorus of “Come On Eileen,” looping at 2:13 a.m.

That’s what happens every May. Some dish—usually golden, a little messy, and far too pleased with itself—starts humming in the back of my brain. I make it once. Then again. Then suddenly it’s in regular rotation, and The One is looking at me across the table with that silent fork-lift of approval that says, Yes, this one stays.

I love those recipes. The repeat offenders. The ones that don’t need a holiday, a dinner party, or a permission slip. They simply show up, make themselves useful, and become part of the season.

So this is my May make-make list: the dishes I can’t stop thinking about, cooking, tweaking, and going back to like a fridge-lit raccoon at midnight.

The Make-Make Rules

  • Notice the craving. The recipe that keeps waving at you deserves a turn.
  • Demand delicious usefulness. Pretty is nice. Repeatable is better.
  • Let one dish lead to another. Leftovers, sauces, sides—follow the breadcrumb trail.
  • Respect the fork silence. When nobody talks because they’re too busy eating, you’ve won.
