I get it—between life, laundry, and trying to remember what day it is, it’s easy to miss a few emails. No guilt. But I’d be remiss (and honestly, a little heartbroken) if I didn’t make sure you saw these spring stunners.
These are the recipes that had readers writing in with “OMG,” “made it twice this week,” and in one case, “you’ve ruined all other coleslaws for me.”
Throwback: Spring Recipes
They’re seasonal, yes—but more importantly, they’re damn good. Fresh herbs, tender veg, flaky crusts, buttery finishes. The kinds of dishes that taste like you put in way more effort than you actually did.

I updated this super easy recipe from a 1960s newspaper clipping that my mother had saved. I changed it by substituting a douse of good sherry and dry vermouth for red wine or cooking wine. The chicken, mushrooms, and paprika combination harkens back to the comfort foods of my childhood—albeit in a more sophisticated version.
Spinach almond pesto, a milder alternative to the classic basil pine nut pesto, is a cinch to make. Toss spinach, roasted almonds, Parmesan cheese, lemon juice, and olive oil in a food processor and buzz until smooth. Ten minutes and you're done.
