Dear Grill: Great Work! Love, Summer 2025 ☀️

Hi Reader,
I know how easy it is to overthink cookouts. You want to impress, but you also don’t want to spend your whole day managing the grill.
Summer Cookout Classics
Turns out, when your grill game’s strong, summer doesn’t want you to stop.
These chicken kebabs are a cinch to throw together. Whip up a flavorful honey, soy, and chile marinade, let the pieces of chicken thigh soak up all that flavor, and then quickly grill or broil.
Korean-style BBQ ribs are sticky, sweet, and tangy. Ginger, honey, brown sugar, and vinegar come together to infuse juicy ribs with Korean flavors. They're cooked in foil so the cleanup is easy-peasy, too.
This slow cooker pulled pork is easy to make with pork shoulder, aka pork butt, onion, beer, sugar, and spices, and it capably feeds a crowd. (Just be certain to stash some in the back of the fridge so you have leftovers.)
I created this barbecue sauce to top the Wyoming burger, but it's also an ideal dipping sauce for French fries. After you've made this quick and easy sauce once, you'll want to slather it on grilled chicken, steak, pork chops...you might never go back to the bottled stuff.
These pressure cooker ribs, which are easy and ideal for the Instant Pot, are finished in the oven with a brown sugar and Dijon glaze. It's a super-fast method for knee-wobbling, lip-smacking, fall-off-the-bone tenderness.
This recipe is my way of taking poetic license with brisket, drawing inspiration from French onion soup for a braising liquid of caramelized onions and garlic, deglazed with apple brandy.
These grilled potatoes are a cinch to make--simply potatoes, garlic, oil, and rosemary—that turn crispy on the outside, blissfully tender on the inside.
These easy grilled scallops come together quickly after a brief marinade in citrus, chile, garlic, soy sauce, and olive oil. They are seared in a cast iron skillet and can be made on a gas, charcoal, or pellet grill or smoker.
